This phase begins once you finish quest Q2.32 Dice Poker: Professional You should beat all 4 of them to win their respect. You'll know that there are some professionals in the Hairy Bear ( M8.24). Tell Zoltan that you've already won some matches. Quest will be continued at the end of chapter III. The merchant will pay you 200 orens for each brooch.

Ramsmeat in the inn ( M8.24) tells you that Berengar was found at the swamps (if Ramsmeat doesn't want to talk to you, leave the inn and reenter it). If Coleman is dead, another phase will commence - Coleman's Death. Persuade Thaler a little bit more about Berengar to find out that he bought his things from Coleman, whom you can find in the Hairy Bear. It knows how to beat a three-of-a-kind only if it has a pair made of bigger eyes than what your three-of-a-kind is. There's little reason to get frustrated, as the AI is dumb as a box of rocks. If you get a three-of-a-kind on your first try, go for an even better hand and re-roll the other two.
If you get nothing, re-roll the entire hand. If you get two pairs, still re-roll three, unless the AI gets a better-eyes three or higher on its first try. If you get a pair on your first try, re-roll the the other three.
It's a relatively low-odds hand that beats not only the pair, but two pairs, which is a rarer hand. There's a very simple trick to winning most matches: Go for the three-of-a-kind.
